Research fields
Bioactive compounds in food with an ability to prevent or alter the risk of life style disease. More recent studies are focused on polyphenols and fibers in fruit, vegetables and on organoselenium compounds.
Development and application of biomarkers for exposure and early effects. Effect biomarkers include biomarkers for oxidative damage to protein and lipids by HPLC as well as xenobiotic defense biomarkers by enzyme assays and gene expression.
The markers have been applied in animal models and in human studies, including dietary intervention studies, environmental studies and biobank-based cohort studies.
Other tasks
Graduate and post-graduate teaching of students in areas of biochemistry, nutrition and toxicology related to bioactive food components.
Present chairman of the Danish Research Platform for Nutrigenomics under the Centre for Advanced Food Studies.
Member of several national and international expert working groups on bioactives. Member of International Editorial Board for Food and Chemical Toxicology.
